No Bake Chocolate Cookies

Prep Notes


1/2 c coconut sugar

3 T cocoa powder

8 T unsalted butter or coconut oil

½ c coconut milk

1/2 c peanut or almond butter (use almond butter for Paleo)

1/8 t sea salt

1 T vanilla extract

1 c unsweetened flaked coconut

2 c chopped nuts (pecans, almond, cashews, etc.)


  1. Place the sugar, cacao powder, butter, and milk in a medium sauce pan over medium heat.
  2. Cook until butter is melted and mixture begins to boil (do not boil for more than one minute), stirring frequently.
  3. Whisk in nut butter, sea salt and vanilla.
  4. Place flaked coconut and nuts in a large mixing bowl.
  5. pour chocolate mixture over and stir until combined.
  6. Using a 2-inch cookie scoop, scoop cookies onto a baking sheet lined with parchment paper.
  7. Chill in the fridge 2 hours until firm.
